The Recipe

INGREDIENTS

  1. 2 scoops vanilla raw vegan protein powder (I like Sunwarrior)
  2. 1/4 tsp salt
  3. 1/2 cup unsweetened shredded coconut
  4. 1/3 cup lemon juice
  5. 1tsp. lemon zest
  6. 2 Tbs. coconut oil
  7. 1 tsp. lemon extract
  8. 1/4 cup dried blueberries

DIRECTIONS

  1. Mix all dry ingredients together. Stir wet ingredients into dry mixture and mix until fully incorporated. Fold in lemon zest and blueberries. Roll into 1-inch balls and place on parchment paper. Refrigerate for 20 minutes. Enjoy 2!
