
Woohooooo so I recently got a new dehydrator to continue my experimenting on raw foods (soon to be available on my website, www.enlightenprinciple.com) and yesterday I made almond bread from a recipe in The Cafe Gratitude (Raw Cafe in San Francisco) recipe book, “I Am Grateful” which, I must say, is quickly becoming my favorite due to it’s easiness in preparation of its recipes. I so would love to go there sometime, as I heard that it was pretty amazing from Christina, owner of Planet Earth Eco Cafe in Hermosa Beach (where I used to work).
So anyway, here is the recipe:
Cafe Gratitude Almond Toast:

1/2 C. Almonds, soaked overnight and drained

2 C. Almond Meal

1/2 C. Veggie Pulp (I used carrot since it called for carrot juice)

1/3 C. (Yellow) Flax Meal

1 tsp. Garlic, finely chopped

1/2 tsp. Salt
Rinse and drain your almonds. Chop coarsely, and mix
well with all ingredients except the carrot juice.
Now add 1/2 cup of the carrot juice and mix well.
Your dough should resemble the consistency of bread
dough. You’ll want it dry enough to shape into a log
(not soupy or runny) but wet enough to stick together.
Now that your dough is ready, shape it into a log
about 3 inches wide and 2 inches high. Now make
slices in the log about a half-inch wide. Place the
slices onto the trays topped with a Teflex sheet.
Dehydrate at 145 for one hour, then turn down the
temperature to 115 until crisp and no moisture
remains.
You can easily add your favorite herbs and spices to
this recipe such as:
Rosemary Garlic: 1 Tbsp finely chopped garlic, 1/4 cup
olive oil, 3 Tbsp dried rosemary
Herbs de Provence: 2 Tbsp Herbs de Provence, 1/4 cup
olive oil
Pumpernickel Rye: 1 Tbsp caraway seed, 3/4 cup raw
carob powder, 2 Tbsp agave
Curry Dill: 4 Tbsp curry powder, 2 Tbsp dill, 8 soaked
figs (chopped fine), 1/2 tsp salt
Sun-Dried Tomato Basil: 12 sun-dried tomato halves,
soaked; 20 large basil leaves, 1/4 cup olive oil
Sooo I haven’t tried it yet, it’s still dehydrating, but I can’t wait. It smells delicioso. On another note, as I was leaving for work today, I was walking down the street to my car and noticed… I can see the Hollywood sign from my street! How cool! The picture is ghetto I know but I couldn’t find the right tool on Adobe =/ I guess it’s usually too smoggy to see it but the rains have cleared the air up =) And I don’t know, but I think I saw Keanu Reeves drive past me in Hermosa Beach a few minutes later… but maybe I was just starstruck by the sign haha. I mean really… what are the chances?
